I am fixin to make this & I typically read all (or most) of the comments to avoid avoidable issues &/or add things that folks suggest. I saw that you referenced another risotto recipe and I was stoked! The link didn’t work. :(
I checked the date of your reply. 2006!! LOLOLOL
I am ALWAYS late to the party.

Comment on tall, fluffy buttermilk pancakes by Heather https://smittenkitchen.com/2017/05/tall-fluffy-buttermilk-pancakes/#comment-2625811 Thu, 04 Jan 2024 23:57:02 +0000 http://smittenkitchen.com/?p=31903#comment-2625811 These are the best pancakes I’ve ever had! I’ve made a few pancakes in my time as a mom- Bisquick (never again) a few from other cookbooks. But these are fabulous! They are light, sweet and comforting. Easy to make and surprisingly filling! Don’t hesitate to make them! I did double the recipe and there were 2 left. Midnight snack. Thank you for all the testing and perfecting!

I still enjoy leafing through them and hope that perhaps there is a space one day for a reincarnation (or at least something similar.) Happy New Year!

I make something similar to go with swedish meatballs (different spice no dill) from Chef Marcus Samuelson
They are a great contrast to meatballs and mashers
How long will these keep in frig? A few days, a week?

Absolutely delicious and very simple to make. I underbaked it at 55 minutes but my skewer came out clean. Still eating it though!

Comment on chicken, leek, and rice soup by Jane https://smittenkitchen.com/2020/03/chicken-leek-and-rice-soup/#comment-2625780 Thu, 04 Jan 2024 16:34:55 +0000 http://smittenkitchen.com/?p=43708#comment-2625780 This came up right when I was craving something soothing after the holiday indulgences. Added bonus: I received 3 BUNCHES of leeks in my grocery order, instead of just 3 leeks. So good. I can see why this came out during the pandemic-the ultimate comfort food!

Comment on short ribs bourguignon by Meagan https://smittenkitchen.com/2006/12/short-ribs-bourguignon/#comment-2625767 Thu, 04 Jan 2024 15:00:42 +0000 http://smittenkitchen.com/2006/12/gutted-and-glutted#comment-2625767 I doubled the short ribs and was glad I did — so much work, you really want leftovers. I followed the recipe as closely as I could (subbing beef stock concentrate for the suggested veal) and echo the other commenter that braising the short ribs a day ahead, and then cooling them so you can remove the fat, is key. The whole thing came together in just about 40 minutes on the second day which is good enough for me on a weeknight. I served it last night with mashed potatoes and tonight I’ll heat up the leftovers with egg noodles. One of the best things I’ve made lately!
